Traditional Stuffed Churros

Prep time: 30 min Cook time: 20 min

Servings: 20 churros

Ingredients:

  • 1 cup water

  • ¼ cup salted butter

  • 1 tbsp sugar

  • ¼ tsp salt

  • 1 cup flour

  • Oil for frying (Peanut Oil is the very best)

  • ½ tsp vanilla

  • 1 egg (room temperature)

  • Cinnamon sugar: 1 tbsp cinnamon & 4 tbsp white sugar (for dusting)

  • Caramel, for filling

Directions

  • Start by heating water, butter, sugar, and salt in a saucepan on medium heat until it simmers.

  • Remove from heat and add flour to the water mixture.

  • Stir with a rubber spatula until it forms a smooth ball of dough with no lumps.

  • Let the dough rest at room temperature for 15 to 20 minutes in a large mixing bowl.

  • Prep the fry oil with 2-3 inches of oil in a deep, heavy pot (cast iron is the very best). Heat until it has a slight shimmer, which about 360 F (180 C.)

  • Mix the cinnamon and remaining white sugar in a bowl and set aside.

  • Add egg and vanilla to the dough and mix with an electric hand beater or a stand mixer until the dough becomes smooth and sticky.

  • Transfer the dough to a Churro Maker with the star tip.

  • Carefully press the mixture of the churro about 4 inches long into hot oil by cutting the end with scissors or with a knife.

  • Fry until golden. This will take about 2 minutes on each side. Flip with tongs.

  • Transfer the churros to a paper towel and dust with cinnamon sugar.

  • Warm caramel on low heat with cream until thin and warm for filling.

  • Fill the clean churro maker or a piping bag with thin caramel and the thin filling tip.

  • Using a wooden skewer or kitchen thermometer press a hole through the churro.

  • Fill the churro by pressing the tip into the space just made with warm caramel mixture.

  • Serve warm with chocolate dip on the side & enjoy!

** Tips on the fry oil:

  • You will know it is just right when the outside becomes slightly crispy quickly. This will help the churro maintain its shape.

  • The temperature drops when dough is added, allow some time for the oil to heat again between frying groups.
