Easy Homemade Roasted Chipotle Salsa Recipe

Ingredients:

  • 3 onions, cut in half and then quartered

  • 3 green chilies, halved and seeded

  • 4 jalapeno chilies, halved and seeded

  • 9 garlic cloves, peeled

  • 2 tbsp olive oil

  • 6 lbs tomatoes, cored and cut in half

  • 3 tbsp chipotle peppers in adobo

  • 1 cup vinegar

  • ยผ cup lime juice

  • 2 tsp sea salt

  • 2 tsp oregano

  • 1 ยฝ tsp black pepper

  • 1 ยฝ tsp ground cumin

 

Instructions:

  • Preheat the oven to 450 degrees Fahrenheit.

  • Place the garlic, onions, and peppers on a baking sheet and toss with 1 tbsp of olive oil.

  • Drizzle the remaining 1 tbsp of oil on a baking sheet. Place the tomatoes and roast for 25 to 30 minutes.

  • Remove the pans and cover them with foil for 10 minutes.

  • Remove the tomato skin and chop it. Add tomatoes to the stock pot.

  • Remove the foil from the pepper mixture. Remove the skin of the peppers with a sharp knife. Add all vegetables and chipotle peppers to the food processor and transfer them to the pot. Add remaining ingredients and boil for 20 minutes.

  • Transfer the jars to the water bath canner with boiling water. Process for 20 minutes.

  • Let cool for 12 or more hours before removing rings, testing lids for seal, labeling and storing in a cool, dark place for up to 18 months.
