Ingredients:
3 onions, cut in half and then quartered
3 green chilies, halved and seeded
4 jalapeno chilies, halved and seeded
9 garlic cloves, peeled
2 tbsp olive oil
6 lbs tomatoes, cored and cut in half
3 tbsp chipotle peppers in adobo
1 cup vinegar
ยผ cup lime juice
2 tsp sea salt
2 tsp oregano
1 ยฝ tsp black pepper
1 ยฝ tsp ground cumin
Instructions:
Preheat the oven to 450 degrees Fahrenheit.
Place the garlic, onions, and peppers on a baking sheet and toss with 1 tbsp of olive oil.
Drizzle the remaining 1 tbsp of oil on a baking sheet. Place the tomatoes and roast for 25 to 30 minutes.
Remove the pans and cover them with foil for 10 minutes.
Remove the tomato skin and chop it. Add tomatoes to the stock pot.
Remove the foil from the pepper mixture. Remove the skin of the peppers with a sharp knife. Add all vegetables and chipotle peppers to the food processor and transfer them to the pot. Add remaining ingredients and boil for 20 minutes.
Transfer the jars to the water bath canner with boiling water. Process for 20 minutes.
Let cool for 12 or more hours before removing rings, testing lids for seal, labeling and storing in a cool, dark place for up to 18 months.

Tips:
