Pickled Sweet Mustard

Make your own delicious sweet and tangy pickled vegetables with this easy canning recipe. Combining cauliflower, cucumbers, and pearl onions with a flavorful brine, these homemade pickles are perfect for snacking or adding to your favorite dishes.

Pickled Sweet Mustard

Serving: 8 pint jars

Ingredients:

  • 1 head of cauliflower

  • 3 lbs pickling cucumbers

  • 6 cups of white vinegar

  • 1 lb pearl onions

  • 3 cups of water

  • 2 tbsp pickling salt

  • 3 Β½ cups granulated sugar

  • 1 tbsp turmeric powder

  • 6 tbsp mustard powder

  • 2/3 cup of clear Jel

  • 2 tbsp pickling spice

Instructions:

  • Firstly, rinse all vegetables under clean water.

  • Cut cauliflower into florets. Peel pearl onion and sliced cucumber into thick slices. Add water into the big pot. Place it over medium-high heat. Bring to a boil.

  • Add turmeric, mustard powder, salt, sugar, water, and vinegar to another pot. Bring to a boil. Stir well.

  • Cut two squares from the cheesecloth, place pickling spice in the middle of the cheesecloth, close the edges of the cloth to enclose the spices, and tie the packet with the twine.

  • When the brine comes to a boil, add a spice packet and boil for 10 to 15 minutes. Remove the spice packet and then add vegetables and stir well. Bring to a boil for 10 minutes.

  • Take little brine and mix with clear jel until smooth. Add it back to the pot and stir well. Let boil for 5 minutes more. Turn off the heat. Place pickles into the jars and leave a little spice.

  • Clean the edges of the jars with a kitchen towel and top each jar with a new sterilized lid. Place jars of pickles into the water bath canner. Let process for 15 minutes.

  • Remove them and let them cool overnight. The next day, check the jars and make sure that all jars achieved a proper seal.

  • Allow the jars to leave for a few days. You can store them in a dark and cool place for up to one year.

  • For crispier pickles, use pickling cucumbers and make sure to cut them into thick slices.

  • Always pack the vegetables tightly in the jars to reduce air space and ensure even brine distribution.

  • Make sure your jars are fully sterilized before filling to prevent spoilage, and be sure to process the jars in a water bath for the full 15 minutes to guarantee a proper seal.

  • If you want to adjust the spice level, feel free to customize the pickling spice blend by adding more or less of your favorite spices, such as red pepper flakes for extra heat.

  • Lastly, let the pickles sit for at least a week after canning for optimal flavor.
