Sourdough Chocolate Chip Cookies with Pumpkin and Pecans

Ingredients You’ll Need

For the Cookies:

  • 1 cup unsalted butter (softened)

  • 1 cup brown sugar (packed)

  • ½ cup granulated sugar

  • 1 cup sourdough starter discard (unfed)

  • 1 cup pumpkin puree (canned or homemade)

  • 2 large eggs

  • 1 tsp vanilla extract

  • 3 ½ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ½ tsp salt

  • 2 tsp ground cinnamon

  • 1 cup semi-sweet chocolate chips

  • 1 cup pecans (chopped, can be toasted for extra flavor)

Instructions

  1. Preheat your oven to 350°F (175°C). Start by lining two baking sheets with parchment paper or silicone baking mats.

  2. In a large mixing bowl, combine the softened butter, brown sugar, and granulated sugar. Using an electric mixer, beat the mixture on medium speed until it becomes light and fluffy, which should take about 2-3 minutes.

  3. Next, add the sourdough starter, pumpkin puree, eggs, and vanilla extract to the butter-sugar mixture. Beat everything together until well combined.

  4. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.

  5. Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. It's essential not to overmix at this stage; otherwise, your cookies might turn out tough instead of soft and chewy.

  6. Gently fold in the chocolate chips and pecans using a spatula or wooden spoon, making sure they are evenly distributed throughout the dough.

  7. Using a cookie scoop or a tablespoon, drop rounded balls of dough onto the prepared baking sheets. Make sure to leave about 2 inches of space between each cookie to allow for spreading while they bake.

  8. Place the baking sheets in the preheated oven and bake for 12-15 minutes. Keep an eye on them; you want the edges to be lightly golden while the centers remain soft. They will continue to cook slightly after you remove them from the oven due to residual heat.

  9. Once baked, allow the cookies to cool on the baking sheets for about 5 minutes. This resting time helps them firm up a bit. Afterward, carefully transfer them to a wire rack to cool completely. This is the perfect time to savor that amazing aroma filling your kitchen!

Helpful Tips:

  • Make sure your butter, eggs, and sourdough starter are at room temperature for a smoother batter and even baking.

  • If you prefer a stronger pumpkin flavor, feel free to add a little more pumpkin puree. Just be mindful that too much extra moisture might affect the cookie's texture. You can reduce the butter slightly if necessary.

  • For thicker cookies, consider chilling the dough for 30 minutes before baking. This helps the cookies hold their shape and intensifies the flavors.

  • For extra flavor, toast the pecans in a dry skillet over medium heat until fragrant before adding them to the cookie dough.

Serving Suggestions

Enjoy this recipe with these ideas:

  • Pair your cookies with a warm cup of coffee, tea, or hot chocolate for the ultimate cozy treat.

  • Spread a layer of cream cheese frosting or your favorite nut butter between two cookies for an indulgent sandwich.

  • For a delicious dessert, crumble the cookies over a scoop of vanilla or pumpkin ice cream.

Storing and Freezing

  • Storing: Keep leftover cookies in an airtight container at room temperature for up to a week. They may soften over time, but they’ll still be delicious!

  • Freezing: These cookies freeze well. Place them in a single layer on a baking sheet until solid, then transfer to a freezer-safe bag or container. They can be frozen for up to 3 months. To enjoy, simply thaw at room temperature or warm in the oven for a few minutes.
